Seekerville Weekend Popcorn Edition



This weekend Seekerville salutes National Popcorn Poppin' Month.

Popcorn is the ultimate writer's snack.

Air-popped popcorn has only 31 calories per cup; oil-popped popcorn has only 55 calories per cup. It's a whole grain, has no fat, no sugar and is low in calories and high in fiber.

We leave you with an easy popcorn treat to park next to your desk while you write.

(Stand up if you are doing NaNoWriMo!! I am!)



Caramel Almond Popcorn Clusters

Yield: 20 Pieces
Ingredients
•10 cups freshly popped popcorn
•2 cups whole almonds
•1 cup firmly packed light brown sugar
•1/2 cup butter or margarine
•1/4 cup light corn syrup
•2 teaspoons vanilla
•1 teaspoon almond extract
•1/2 teaspoon baking soda

Directions
1.Preheat oven to 225 degrees. Spray 15 x 10 baking sheet with non-stick spray. Mix popcorn and almonds in large bowl.
2.Combine brown sugar, butter and corn syrup in medium saucepan. Over low heat, stir mixture until sugar dissolves. Increase heat to high and boil 5 minutes. Remove from heat; stir in vanilla, almond extract and baking soda.
3.Pour over popcorn and almonds, immediately stirring gently to coat. Pour mixture onto prepared baking sheet, spreading evenly.
4.Bake for 1 hour in preheated oven. Cool completely. Break into pieces and store in airtight container.

    Tina, I'm doing NaNoWri, though I'm wondering how much I'm going to get down. I've spent the last week editing and can see at least another week before I finish. Got some thoughts in my head about this next manuscript but I haven't had time to plot so I'll be winging it.

    And thanks for the popcorn! My DH is taking me to see 'Amelia' tonight and I can sneak it in my purse.

  2. Great way to kick off Halloween and to get the weekend hoppin', Tina, or 'poppin', I guess you could say. I actually never eat popcorn although I love it, but I may start after this blog ... :)

    Hazelnut coffee is on and I picked up a cinnamon apple kringle because my husband brought one home this week and ruined my taste for my usual peach oatmeal. Kringles are decadent and deadly to my diet, but OH, soooo good!

    Happy Saturday, all! And, YES!! The rain has stopped in St. Louis after more than a foot this month!

    I married a popcorn-aholic. The good thing is he's safe to drive with...

    And he works it off which is SO UNFAIR....

    But the man can eat a huge silver mixing bowl, restaurant size, of popcorn in one sitting. With butter. And salt. And he's still alive.

    So we buy the 50 lb. bags at Sam's...

    and eat them. It's truly sick.

    Looking forward to NaNoWri, just registered, have never done this.

    But anything that thrusts writers into a forward mode is good by me.

    Okay I admit I am not doing any NaNo socializing. Just the facts ma'am. Only writing.

    Yeah, Vince, it's been a fun week. Amazing how much prayer you can get in as you are white knuckling it to work on a back road at 6 am.

    Remember not to compare yourself to anyone else as you set forth on NaNo. Anything you accomplish is more than you would have accomplished if you didn't sign up. Right? I mean WRITE?

    My daughter, Grace, won the 12U volleyball championship!!!

    Well, her TEAM, the Purple Pandas, won the championship, but same thing. Her dad was the coach. It was the most nerve-wracking hour of my life. I was limp as a dishrag afterward, shaking like a leaf during, and my heart was pounding like a (insert cliche here).
