And funny you should mention Cupcake Wars from Food Network! :) I LOVE Food Network, and this past summer one of the guys from my home county was on Cupcake Wars helping his sister in the competition.
Anyway, the guy (who is super sweet and fun!) owns this place called Mity Nice Bakery in Eureka, CA. :) So when we saw an article in the newspaper about him, we had to go and try his cupcakes. And uh, can you say YUM?! He has a couple of different chocolate ones that are to die for. Yes, death by chocolate is THE way to go! ;) Just kidding!
But seriously, they are GOOD!

ReplyDeleteMy favorite cupcakes have turned out to be quite elusive. Someone at work brought in cupcakes from the local Safeway---chocolate and Vanilla with the prettiest pastel frosting colors I'd ever seen. Sort of like looking at pastel tie-dyed cupcakes with sprinkles.
Yet every time I've gone into Safeway since they never have them! (I think that is meant for my protection though I manage to find plenty of other sugar sources).
I love cupcakes. And those star candles in the picture? My mom just bought a pack of them for my son. He just turned two recently.

mum always made little cakes what i think we called cup cakes and would ice them ice pink icing and use sprinkles or other things to decorate them. The ones she made I like best were the ones with a cherry on top.

she also made jelly cakes with the little cakes they were yummy too.
Havent had as many of the shop ones. but like the ones the bakery make. I had a really yummy one in Washington state.

I discovered ice cream cone cupcakes when my kids were small, and I still love them. You basically pour the batter into the cone (the flat bottom kind) instead of a cupcake tin. You get to eat the cupcake and the wrapper and when you're done, you have less mess. Milk chocolate icing is usually my preference. :)

Now to cupcakes. There is a place called the Cupcake Shoppe in Raleigh where the frosting is as high as the cupcake. It is hard to choose but their coconut is wonderful. I just checked their menu and their flavor of the week is PUMPKIN with MAPLE frosting. Yummm.

ReplyDeleteI have to say, I'm not picky about any cupcakes. I like them all for the most part. BUT my favorite cupcakes have to be 1) the surprise cuppies my grandma makes with the frosting on the inside and the top or 2) the racoon ones my mom made for my 6 (?) birthday. So it's not the actualy cupcake, but the design I guess. I love Pocahontas, one of my fave Disney movies, and I have Meeko (my stuffed animal that has travelled to all the states and countries I've been to and goes back and forth from school every weekend with me, lol!). So my mom made me Meeko cupcakes!! They looked a little like this:

ReplyDeleteI hesitate to say this since cupcakes are the rage, but I have a problem with them.
For one thing those little paper cups are annoying. Once you peel them off, they just don't look nice on the plate. Plus I ofen get an urge to nibble the crumbs off the paper. It's hard to be a lady with a wad of crinkled paper hanging out of your mouth. Am I right?
Another negative--cupcakes are small. I tend to wolf them down instead of savoring them like I would a piece of cake. You do realize you get less frosting?
This opinion has probably put me at odds with everyone. But give me slice of layered cake oozing frosting any day.

I love cupcakes but really haven't eaten one for some time now. My favorite when I was growing up was chocolate or devils food with my mom's special Chocolate Candy Icing. She lost the receipe years ago unfortunately. The icing was so yummy. It was like chocolate fudge and it made like a shell on the cupcake (or cake too). I would eat the cupcake and save the icing part until the very end and eat it like candy. Yummo.

Just one kind of cupcake? Carrot with cream cheese frosting seems delicious but I've never actually had that kind. My mom makes cupcakes with yellow cake mix and then tops them with homemade fudge frosting---Those are the best!

CINDY W this might be your mom's lost frosting.
ReplyDeleteChocolate Fudge Frosting
Delicious--like candy--but tricky. Easy to overcook.
1 C. sugar
1 heaping T. cocoa
1/3 C. milk
Boil nearly to soft ball stage. That means a candy thermometer which I don’t own. That might be why I always over cook it.
Then it turns to a solid, unspreadable chunk of frosting(which I kno for a FACT is delicious. It's not FROSTING but it's delicious). Add:
1 t. vanilla
1 T. butter
Cool partially.
Add:
Powdered sugar to the right consistency.
I always add too much!
My husband’s mother makes this perfectly, but it's HARD to get it right. Done correctly, it’s about the best in the world. Good luck.
Ahhh cupcakes. And yes Amber, Death by Chocolate is a great way to go. Hey Amber, are you from the Eureka area? I used to live in Arcata.

And Tina, you have a great point about the cupcake setting a boundary. That is why I buy the one ounce packages of chips because otherwise I would eat the whole bag and this way it is just one helping.

Hi Tina,
ReplyDeleteHere is mums recipe. its fairly easy and can be used for so many things. she also would use this then put slices of apple on top with some cinamon, she also put dates on top of some. and made a cherry cake by putting cut glaze cherries into the mixture.
2 eggs
½ cup sugar
Vanilia essense cream
1 cup flour
½ teaspoon Bicarb soda
1 teaspoon Cream of tartar salt
Method:
Break egg into cup filled up with cream. Beat with sugar, fold in flour. Cook Moderate oven for ½ an hour. Double to make a lamington cake.
You can add cocoa to make a chocolate cake. Also makes little cakes.
Cupcakes -- yummy! I'll take nearly any kind someone offers 'cause my mama raised me to be nice about those kinds of things. :-) Favorites would be either homemade white cupcakes with homemade caramel icing, or chocolate chip cupcakes with chocolate or vanilla icing. Cheryl I love bran muffins and Morning Glory muffins. Just a dab of cream cheese frosting and they can masquerade as cupcakes.

ReplyDeleteAnd with one birthday last week, one birthday this week, a wedding reception next weekend and the birthday PARTY the weekend after that, I'm going to have WAY TOO much cake in the near future. But I will think of you while eating it! ;)
Wow, sounds like the general trend is that everyone loves every kind of cupcake! The best part of that is that if you don't love one cupcake, eat another one in a different flavor and you are sure to like that one even more. Just keep eating! As a side note, I used to work with a surgeon who never knew that the paper wrapper on most cupcake is not for eating! He thought they were all made of edible paper. That's like 12 years of education for nothing.

I love Mary Janes that Mom used to make. They are a white cupcake and you put raspberry jam around the outside and coat with coconut. You frost the top with white icing(just around the outside of the top to about halfway in and then put raspberry jam in the middle and sprinkle coconut on the jam.
