I had no idea my cookies would be such a hit. Found another recipe for two-ingredient lemon bars that I have to try.
ReplyDeleteKraft Peanut Butter Cookies:
ReplyDelete1 cup (250 mL) peanut butter
½ cup (125 mL) sugar
1 egg
Mix ingredients until well blended. Drop 26 balls of dough, 2” apart, onto baking sheets. Flatten slightly with fork.
Bake in 325oF (165oC) preheated oven for 12½ minutes, or until lightly browned. (Do not overbake.) Cool 5 minutes on baking sheets; transfer to wire racks. Cool completely.
Makes about 23 cookies. Preparation time: 20 minutes. Total time: 32 minutes.
* Per cookie: 72 calories, 4.1 g protein, 7.5 g total fat (1.4 g saturated fat), 15.6 g carbohydrates, 1 g dietary fiber, 17%RDI folacin.
* I multiply by 4, as 1 kg of peanut butter = 4 cups; or I multiply by 2, as 500g of peanut butter = 2 cups.
* I still make the flour recipes on occasion, but this one works quickly and is allergy friendly.
* Variation: Make “Peanut Butter Buttons” (also compliments of Kraft) by adding ⅓ cup Baker’s Semi-Sweet Chocolate Chips by “gently pressing 2 big chocolate chips into top of each” before baking. (I use one-eighth of Reese’s pieces instead.)

ReplyDeleteAnd since autumn is nearly upon us -- here's my favourite pumpkin cookie recipe:
2 1/2 cups flour
1 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp cloves
1/2 tsp salt
1/2 cup butter, softened
1 1/2 cups white sugar
1 cup canned pumpkin puree
1 egg
1 tsp vanilla extract
(glaze if desired)
2 cups icing sugar
3 tbsp. milk
1 tbsp. melted butter
1 tsp vanilla extract
Y'all know how to moosh together a cookie recipe, right? blend butter and sugar together first then add egg. After that she toss everything else in and mix. bake at 350 about 15 minutes. Once cookies are cooled drizzle glaze on top.

Hands-On Time 15 minutes Total Time 35 minutes
Makes 3 dozen cookies
Ingredients
1/2 cup unsalted butter, at room temperature
1/2 cup granulated sugar
1/2 cup brown sugar
1 large egg
1 teaspoon pure vanilla extract
1 1/2 cups all-purpose flour
1/4 cup unsweetened cocoa powder
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup milk-chocolate chips
1/2 cup semisweet chocolate chips
Directions
Heat oven to 350°F. Cream the butter and sugars in a large bowl with an electric mixer on high speed. Lower to medium speed and add the egg and vanilla. Sift together the flour, cocoa, baking soda, baking powder, and salt. On low speed, add the dry mixture to the butter mixture. Beat until fully incorporated. Fold in the chocolate chips.
Form the dough into approximately 1 1/2-inch balls. Place on parchment- or foil-lined baking sheets, 2 inches apart.
Bake until the centers are just set, about 12 minutes. Let cool on sheets for 5 minutes, then transfer to wire racks.

My favorite cookie is Red Velvet.
I found a new cookie recipe on Pinterest and made them a week ago. Here is the recipe for Fluffernutter Cookies. They only have 3 ingredients and I loved them.
1 cup creamy peanut butter
1 large egg
1 cup marshmallow cream
Preheat oven to 350 degrees. In a large bowl mix the peanut butter and egg until well combined with a spoon. Slowly stir in the marshmallow cream until just combined. You want to see the marshmallow cream not fully incorporated, almost like swirled through. With small medium cookie scoop, scoop dough onto a parchment lined baking sheet. Bake for 12-15 minutes or until baked through. Let cool 5 minutes on cookie sheet before transferring to a cooling rack. About 18 cookies.

I am so excited! My husband's birthday was a few days ago. He said I was the only gift he and chose to celebrate me! I got a dozen roses and...drumroll please... a brand new computer. And it's purple, (See pics on FB) That's romantic enough to be written into a story, I think. Up for grabs - computers don't work well in the historicals I write.

The chocolate chip cookie has been perfected!
Oatmeal Crispies
These are Karen Coopers and probably the ultimate chocolate chip cookie if you like oatmeal. Otherwise just use the back of the chocolate chip cookie bag.
1 C. white sugar
1 C. brown sugar
½ C. butter
½ C. Crisco
2 eggs
1 t. vanilla
Mix. Add:
2 C. flour
1 t. soda
½ t. baking powder
½ t. salt
3 C. quick oats
2 C. chocolate chips
Makes 6 dozen. Bake at 3500 for 8- 10 minutes. As a matter of fact, from here on out. Just bake everything at 3500 unless I tell you different.
Cookies you buy in a store are also delicious.

This recipe is not my own chocolate chip pretzel cookie recipe, but it is close. Basically we make the back of the bag cookies and add crushed pretzels.
Chocolate Chip-Pretzel Cookies

3/4 cup butter, softened
3/4 cup granulated sugar
3/4 cup firmly packed dark brown sugar
2 large eggs
1 1/2 teaspoons vanilla extract
2 1/4 cups plus 2 Tbsp. all-purpose flour
1 teaspoon baking soda
3/4 teaspoon salt
1 1/2 (12-oz.) packages semisweet chocolate morsels
2 cups coarsely crushed pretzel sticks
Parchment paper
Preparation
1. Preheat oven to 350°. Beat butter and sugars at medium speed with a heavy-duty electric stand mixer until creamy. Add eggs and 1 1/2 tsp. vanilla, beating until blended.
2. Combine flour, baking soda, and salt in a small bowl; gradually add to butter mixture, beating just until blended. Beat in morsels and pretzel sticks just until combined. Drop by tablespoonfuls onto parchment paper-lined baking sheets.
3. Bake at 350° for 10 to 14 minutes or until desired degree of doneness. Remove to wire racks, and cool completely (about 15 minutes).

3/4 cup Butter

2 Eggs
3/4 tsp Vanilla extract
2 1/4 cups All-purpose flour

12 oz White chocolate chips (option: chopped)
1/8 tsp Cinnamon, ground
1/4 tsp Salt
1/c cup dried Cranberries

I love spices, plus they're good for you. Which makes spice cookies good for you, right? So here's my favorite spice cookie recipe - Soft Pfeffernusse:

3/4 c brown sugar
2 T molasses
2 T honey
1 egg
2+ c flour
1/2 t soda
1/2 t salt
1/2 t each cinnamon, cardamom, fresh ground black pepper, anise, ginger
1/4 t each nutmeg, cloves, allspice
I like to heap all the spoonfulls of spice, plus add a dash of cayenne, paprika, and some raw grated ginger root for more of a kick. Refrigerate dough for an hour or so, then bake 10 minutes at 350. Then, if you're in the mood when they cool, roll them in powdered sugar.

ReplyDeleteI've been without an oven for months, so no cookie baking here! I make peanut butter treats instead..
1 small jar marshmallow cream
1 cup smooth peanut butter
rice krispies (I never measure.. so I'm going to guess 2 cups or so.lol)
chocolate chips
mix first three ingredients together and form into 2 inch ball (I coat my hands with coconut oil cooking spray because it's sticky). then I Pop them in the fridge while I melt the chocolate chips. dip then place on waxed paper. once cooled, I usually dip in melted chocolate again (because really, who doesn't wanted double chocolate ;) ) then store in the fridge.

Every Christmas I would make my favorite cookies for neighborhood cookie trays -- Sugar cookies with three different color icing and sprinkles/redhots, Russian Tea Cakes (my fave!!), Chocolate and vanilla pinwheel spritz, Christmas tree spritz, and peach and raspberry jelly centered spritz flowers, Rice Krispie wreaths with red hots, M&M cookies, green almond bark, snickerdoodles, and fudge. LOVE, LOVE, LOVE cookies!!

As much as I love cookies, my favorite is the classic chocolate chip! Here's my go-to recipe from a friend who worked at Mrs. Fields... throw my name in the batter bowl! ;)

1 c. white sugar
1 c. brown sugar
2 eggs
2 cubes butter
Add and mix:
1.5 tsp vanilla
1 tsp baking soda
1 tsp salt
Change to dough beaters and mix in:
3 c. flour
2 c. semi-sweet chocolate chips
Bake at 375 degrees for 9-11 minutes (until edges are lightly browned)
Enjoy! :)

Easy Scottish Shortbread Cookies
Ingredients:
4 1/2 ounces (125g) of salted butter
A bit more than 1 cup (110g) flour
1/3 cup (55g) cornstarch
5 tbsp (60g) soft brown sugar (plus a tablespoon to sprinkle on top)
Instructions:
Contrary to many shortbread cookies recipes, we will use a cake pan to shape these sticks.
1. Whisk sugar and butter at room temp until creamy. Add cornflour and beat until smooth.
2. Add flour and knead by hand until you get a ball of dough. DON'T OVER-KNEAD. You want a crumbly texture. If over-kneaded, cookies will be dense and tough.
3. Line a rectangular cake pan with wax paper. Pack the dough into the pan with a glass and prick with a fork, then cut dough into strips.
4. Bake for about 20 min at 300°f (150°c), the cookies should be VERY lightly browned on the edges.
5. Remove the pan, sprinkle with sugar, let stand a few minutes, re-cut cookies with a gentle, fluttering motion. Be careful because these cookies are very crumbly. Let cool and enjoy. These easy shortbread cookies will retain several days in a tin.

2 C sugar
3 T cocoa
1 stick butter
½ C Milk
Cook all in a saucepan to a rolling boil for 1 ¼ minutes.
Next add:
½ C peanut butter
1 tsp vanilla
3 C oatmeal
Stir well to incorporate.
Drop on waxed paper.
Let harden. Gently remove from the waxed paper. Store in a foil-lined tin.

I really enjoy the weekend editions so many great links. This weekend has been especially busy for me as I am finally sending my children back to school and last minute shopping is not fun. Anyways children like cookies and I'll be happy to share a recipe my childen love.

2 packages devil's food cake mix (regular size)
4 large eggs, lightly beaten
2/3 cup canola oil
FILLING:
1 package (8 ounces) cream cheese, softened
1/2 cup butter, softened
1/2 teaspoon vanilla extract
3 to 4 cups confectioners' sugar
Red and/or green food coloring, optional
1. Preheat oven to 350°. In a large bowl, beat cake mixes, eggs and oil until blended. Shape dough into 1-in. balls; place 2 in. apart on ungreased baking sheets and flatten slightly.
2. Bake 8-10 minutes or until a slight indentation remains when lightly touched. Cool on pans 2 minutes. Remove to wire racks to cool completely.
3. For filling, in a large bowl, beat cream cheese, butter and vanilla until blended. Beat in enough confectioners' sugar to reach desired consistency. If desired, tint with food coloring.
4. Spread filling on bottom of half of the cookies. Top with remaining cookies. Yield: about 4 dozen.
Note: This recipe was tested with Duncan Hines Classic Devil's Food Cake Mix; results may vary when using a different product.

Hey, Sarah, I did too, and I reallly liked it a lot!! That was smart of Bethany House to put so much of the book at the back of that novella. Usually publishers just put a chapter in, bu they put in quite a few.
